It's always important to love yourself first. We are not defined by our current situations or circumstances of our past. It's not what happens to us that determines our success in life; but it is how we deal with circumstances, that determine our success.
“Switcha” is the Bahamian word for lemonade. In The Bahamas, it’s commonly made with limes instead of lemons. Either way, it’ll be delicious and refreshing!
Instructions: Using a Gallon Pitcher, pour in the water until the jug is half full. Then You cut the limes in slices, place a few of the lime slices in the water and you add the sugar. Stir the mixture using a big spoon so that it mixes well. Add a few cubes of ice (optional) and place in the freezer until chilled. Serve in a glass and add a slice of lime on the rim of the glass to give it a refr4eshing look.
This is my recipe of a classic dish from The Bahamas, I learned this from my mother. White Rice and Corned Beef or like Bahamians say Fire Engine.
Ingredients
Corned Beef
White Rice
In a medium saucepan add your corned beef and all ingredients and mix. Cook on medium/low for 20 minutes stirring occasionally. Cover and simmer for another 10 minutes on low heat setting.
Serve with white rice or pasta. My siblings loved the shells, but I prefer rice.
White Rice
Cook desired amount of rice in a rice cooker or saucepan.
For 4 servings I use 2 cups rice and 4 cups water. Add salt and oil to water and bring to a rapid boil. Add rice and stir. Bring back to a boil. Once rice is drying (about 3-5 minutes) cover with a tight lid and turn heat low. Cook for 20 minutes. Do not lift lid during cooking time. After 20 minutes, stir rice and continue cooking on low heat for another 10 minutes. Rice is done when you taste it and its soft. The food is now done and ready to be served.
